Anytime Dessert Pancakes

Who says pancakes are only for breakfast! This Dessert pancake recipe can be served just as proudly after dinner as it can on a Sunday brunch. This is one of those decadent desserts that are simple to make but make a big impression.


1 cup flour
4 tbs. sugar
2 tsp. baking powder
ΒΌ tsp. salt
1 cup milk
1 lemon, juiced
2 tbs. olive oil
1 egg

8 ounces semi-sweet chocolate
Banana, sliced
Powdered sugar, for dusting
Quality chocolate ice cream


1. Combine the flour, sugar, baking powder and salt in a large bowl. In a measuring cup, add the milk and lemon juice. Let sit for 10 minutes, and then add the oil.
2. Combine the milk with the dry ingredients and whisk smooth. Heat a skillet to medium and cook the pancakes in batches, flipping once bubbles begin appearing on the top.
3. Add the chocolate, chopped, to a medium heatproof bowl. Add a few inches of water to a saucepan and bring to a simmer. Turn off the heat and place the bowl on top of the saucepan. The bowl should not touch the water. Whisk the chocolate until melted and smooth.
4. Serve the pancakes with chocolate ice cream, bananas, the chocolate sauce, and a dusting of powdered sugar.
