Asian Style Fried Prawns

By: Sheila Reynolds

Here is a simple Asian twist on the classic fried shrimp recipe. Using tempura batter is the best way to pull of this dish, but can use normal flower as well and they will still be deep fried goodness.

  • 1 lb. prawns, cleaned, deveined, tails on
  • 2 cups flour ( or tempura flour)
  • 1 tbs sesame oil
  • 1 tbs baking powder
  • 1 tsp. salt
  • 2 cups iced seltzer water
  • Oil, for frying

  1. Heat oil to 350 degrees in a heavy-bottomed pot.
  2. With a paring knife, make small, shallow cuts along the inside curve of each prawn, using your palm to flatten it.
  3. Combine the flour, sesame oil, salt and baking powder in a bowl. Whisk in iced seltzer.
  4. Dip the prawn into the batter and then place in the oil. Repeat with each additional prawn. Fry for two to three minutes, until lightly golden and firm.
  5. Remove to a paper towel to drain before serving.
