Barbecue Shrimp and Polenta Recipe

Barbecue Shrimp and Polenta is a southern classic dish you will love. Here are the basics to creating this masterpiece.

Barbecue Shrimp and Polenta Recipe


1 lb. shrimp, peeled and deveined, tails on
½ cup honey
1 chipotle pepper in adobo, chopped
1 bunch scallions, sliced, greens only
1 lemon, zested
Salt and pepper, to taste

1 cup quick cooking polenta
1 ½ cup vegetable stock
1 ½ cup whole milk
1 tbs butter
Salt and pepper, to taste


1. Preheat a grill to medium. Season the shrimp with salt and pepper.
2. Combine the honey and chopped chipotle. Grill the shrimp for about four minutes on the first side and two to three minutes on the second side, basting with the honey sauce. Remove from heat.
3. Combine the stock and milk in a saucepan and bring to a high simmer. Stir in the polenta, whisking constantly until thickened. Stir in the butter, season with salt and pepper, and remove from the heat.
4. Arrange the polenta on a serving platter and top with the shrimp. Garnish with lemon zest and scallions.
