1 rack of pork spare ribs
2 tbs kosher salt
1 tbs black pepper
2 tbs brown sugar
2 tbs paprika
1 tbs cumin
1 lemon, juiced
Barbecue sauce

1. Rinse and trim the spare ribs. Pat dry and then combine the spices with the lemon juice, creating a loose paste. Rub this all over the ribs and refrigerate overnight.
2. Heat the oven to 400 degrees. Bake the ribs, covered, for 90 minutes. Remove from the oven and let cool.
3. Heat a charcoal grill to medium (about 350). Grill the ribs on the coolest parts of the grill, covered, for about 30 minutes, flipping often. Then, baste the ribs with barbecue sauce for an additional 10 minutes. Remove, top with additional sauce, and serve.
