Beef Taco Casserole

By: Sheila Reynolds

Here's a Family Friendly Beef Taco Casserole recipe. My entire family has a sweet spot for Mexican food, so I am constantly hunting for new and interesting Mexican dishes to try. The thought of turning a beef taco into an entire casserole was definitely enough to make my mouth water. The best part of this dish is that you can serve it with a side salad and you have a complete meal ready to go! I like the flexibility of this dish as well. If you want to add some peppers or extra sauce it is only going to make it more filling and flavorful.

1 pound of ground beef
8 ounces of macaroni
1/2 cup of onions, chopped
1 can of condensed tomato soup
1 can of diced tomatoes
1 package of taco seasoning mix
2 ounces of shredded Cheddar cheese
2 ounces of shredded Monterey Jack cheese
1 cup of crushed tortilla chips
1/4 cup of green onions, chopped
sour cream to taste/as desired
salsa to taste/as desired
