2 sticks butter
1 ½ cups sugar
12 eggs, separated
½ tsp. cream of tartar
4 cups semi-sweet chocolate, chopped

1 pint fresh strawberries
1/8 cup sugar
4 tbs. water
1 tbs. balsamic vinegar

1. Preheat the oven to 375. Line individual ramekins with parchment paper, butter the paper, and place on a sheet pan. Beat the egg whites, sugar and cream of tartar on low speed until peaks form.
2. Melt the chocolate in the butter and then slowly whisk in the egg yolks one at a time. Fold in the egg white mixture carefully. Do not over mix.
3. Divide the batter equally between ramekins and bake for 15 minutes. Let cool for five minutes before removing to a serving platter by pulling up the parchment paper.
4. Add the strawberries, sugar, water and balsamic vinegar in a sauce pan. Bring to a simmer and reduce the heat. Cook for 15 to 20 minutes, breaking up the strawberries with a spoon.
5. Garnish the soufflé with powdered sugar, the strawberry sauce and a fresh strawberry.
