Crème Caramel Recipe

2 cups heavy cream
4 egg yolks
½ cup sugar
1 tsp. vanilla extract

Caramel topping

1 cup sugar
½ cup water

  1. Preheat oven to 325 degrees.
  2. Bring the cream to a high simmer over medium heat. Blend the yolks, sugar and vanilla in a separate bowl. Whisk a ladle of the hot cream into the mixing bowl, beating quickly by hand to temper the yolk mixture. Add the contents of the mixing bowl into the pot to combine. Strain.
  3. Pour mixture into individual ramekins brushed with butter and place the ramekins inside of a deep-sided casserole dish. Pour bowling water into the casserole around the ramekins so that 1/3 of the top of each dish is above the water, creating a water bath.
  4. Bake for 30 to 35 minutes. Cool completely. Remove crème caramel to individual glasses.
  5. Dissolve sugar in water over low heat. Turn the heat up and cook until a rich brown color. Drizzle over individual crème caramels and top with thin wafer cookies before serving.
