Crisp Carrot Slaw Salad

The beauty of this carrot slaw recipe is in it’s simplicity. The goal is to draw out the natural bursting flavors of the carrots and keeping it super healthy and light at the same time. This is a great side dish for complimenting any healthy meal or adding a burst of color to lighten up your plate.

Crisp Carrot Slaw Salad Recipe

Ingredients:

4 medium-large carrots
¼ cup olive oil and vinegar salad dressing
basil (for garnish)

Instructions:

Coursely grate the carrots into a bowl. Add the oil and vinegar salad dressing and quickly toss. Eat immediately so you can enjoy the crispness of the carrots before they have a chance to soak up the dressing.
