Decadent Chocolate Truffle Cake Recipe

Chocolate Truffle Cake Recipe


4 ounces bittersweet chocolate, chopped
3 tbs heavy cream
1 tbs butter
1 tbs almond liqueur
Dash cinnamon

1 cup hot water
1 cup freshly brewed coffee
1 cup cocoa powder, unsweetened
2 ¾ cup plus three tablespoons cake flour
2 tsp. baking soda
1 tsp. baking powder
½ teaspoon kosher salt
1 cup butter, unsalted
2 ¼ cup white sugar
4 eggs, room temperature
1 ½ teaspoons vanilla extract

1. Melt chocolate, cream, liqueur, and butter over a double boiler. Whisk smooth and add a bit of cinnamon. Refrigerate until thick, about 20 minutes. Line a tray with parchment paper. Create drops of chocolate along the tray, about 1 ½ inch mounts. Refrigerate until firm.
2. Combine flour, baking soda, baking powder and salt in a bowl. Combine cocoa powder, hot water, and coffee, whisking until smooth, in a separate bowl. Cream butter and sugar, and whisk in eggs one at a time. Stir in vanilla. Add some of the cocoa mixture to the flour, then some of the butter mixture. Repeat, alternating, until thoroughly combined.
3. Fold in truffles. Pour batter into a prepared loaf pan. Bake at 350 for 30 to 40 minutes or until the center is set. Let it cool in the pan.
4. To serve, slice a piece off of the loaf. Place a stencil in the upper portion and sprinkle powdered sugar over it. Garnish with cinnamon and whole star anise, and serve.
