This rich and decadent Creamy Broccoli Soup recipe is so delicious you will forget it's healthy for you. Of course its not the lowest calorie soup with the heavy cream and butter, but if the French can indulge, why can't you?

Decadent Creamy Broccoli Soup Recipe


4 tbs olive oil
1 tbs butter
1 Vidalia onion, chopped
2 cloves garlic, minced
3 cups quality chicken stock.
10 cups broccoli florets
3 tbs flour
1 cup heavy cream
Salt and pepper, to taste


1. Heat two tablespoons of olive oil in a stock pot to medium. Sautee the onion and garlic until translucent, and then add the broccoli. Cook until slightly browned, about 10 minutes.
2. Add the chicken stock and bring to a boil. Reduce the heat and simmer until the broccoli is tender, about 20 minutes.
3. Blend the soup with an immersion blender. In a separate small pot, heat the remaining olive oil and the flour, cooking until light brown. Season with salt and then whisk into the soup. Add the milk and season with salt and pepper. Serve warm.
