If you are looking to impress your dinner guest with a fancy appetizer this Decadent Prawn Appetizer with Spiced Cream Cheese and Caviar will do the trick. You’ll get an “A” for presentation and depending on if your guests have taste buds for caviar, you’ll win in that department as well.

Ingredients

Pumpernickel bread, cut into rounds
Prawns, peeled and deveined, tails on, cooked and chilled
1 cup cream cheese
1 lemon, juiced
2 tsp. seasoned pepper
Salt, to taste
Endive hearts, rinsed and patted dry
Salmon caviar
Fresh herbs, for garnish
Lemon wedges, for garnish
Chives, for garnish

Directions

1. Combine the cream cheese, lemon juice, seasoned pepper and salt in a bowl. Whisk to combine and then chill for two to four hours.
2. Arrange the pumpernickel rounds on a tray. Top with fresh herbs of your choice and then a dollop of the spiced cream cheese.
3. Nestle a prawn on each round, pressing it into the cream cheese and off to one side of the pumpernickel round. Place a small leaf of endive next to this, pressing it into the cream cheese and curling the edges so they form a small cup.
4. Top the endive with a small teaspoon of caviar and serve garnished with lemon wedges and chives.
