Deep Fried Banana Fritters

These fried banana fritters are great way to enjoy a state fair favorite at home. You can choose to add a little class to this dessert by drizzling over honey, chocolate, or other sweet toppings to take this dessert to the next level.

Ingredients

4 bananas, cut into chunks
1 lemon, juiced
¼ cup flour
¼ cup rice flour, plus more for dusting
¼ cup cornstarch
½ tsp. salt
1/3 cup cold coconut water
1 vanilla bean, scraped
1 egg
Oil, for frying
Powdered sugar, for dusting

Directions

1. Heat oil in a large, heavy pot to 350 degrees. Dress the bananas with lemon juice to preserve color.
2. Combine the flour, rice flour, cornstarch, salt and the vanilla bean and stir to combine. Whisk in the cold coconut water and then whisk in the egg.
3. Dip the banana chunks in the batter and then lightly dust with additional rice flour. Fry for about 8 minutes, or until gold brown. Drain and dust with powdered sugar before serving.
