Delicious Curry Pumpkin Soup Recipe

This delicious Curry Pumpkin Soup recipe is not only healthy, but has just the right level of heat from the curry and red pepper to hit your taste buds in all the right places. Server as the main course or as side dish and you will be sure to impress your dinner guests.


4 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 tsp. roasted curry powder
½ tsp. red pepper flakes
3 cans of pumpkin (not pie filling)
6 cups chicken broth
Pumpkin seeds, garnish
Croutons, garnish


1. Heat the oil to medium high. Sautee the onions and garlic for 6 to 8 minutes, and then add the spices. Stir until fragrant.
2. Add the pumpkin and chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
3. Puree with an immersion blender. Garnish with pumpkin seeds and croutons before serving.
