Dessert Sushi

By: Sheila Reynolds

This unique Dessert Sushi is a fun way to surprise your “sushi fan” friends and family after a meal of authentic sushi. You can be just as creative with picking the types of fruit you wrap in this dish as you would in preparing real sushi.

1-¼ cups flour
¼ cup unsweetened cocoa powder
4 tbs. sugar
½ tsp. salt
1 tsp. baking powder
1 ¼ cup whole milk
¼ tsp. vanilla
2 tbs. melted butter

2 cups whipped cream cheese
¼ cup sugar

Diced fruit
Powdered sugar
Chocolate sauce
Strawberry sauce
Mint, for garnish

1. Combine the flour, cocoa powder, sugar, salt and baking powder in a bowl. Add in milk, vanilla and butter, whisking to combine.
2. Heat a large skillet to medium. Spread the batter thin across the bottom of the pan and cook, flipping once. Cook in batches until the batter is gone.
3. Whisk the cream cheese and sugar together. Chop the fruit and arrange it in separate dishes.
4. Lay a chocolate pancake flat and spread with cream cheese, arrange fruit along the pancake and then roll it over on itself. Repeat with the remaining pancakes, fruit and cheese.
5. Slice the rolls into individual pieces. Garnish with powdered sugar, mint, chocolate sauce and strawberry sauce.
