1 cup sugar
1-½ cups cake flour
½ cup unsweetened coco powder
¼ cup sweetened coco powder
3 tsps. baking powder.
1 tsp. baking soda
¼ tsp. salt
1 cup whole milk
3 eggs
3 tsps. vanilla extract
6 tbs. olive oil
1 cup hot coffee

1 lb. bitter sweet chocolate, chopped
1 cup heavy cream
White and dark chocolate shavings, for garnish
Cocoa powder, dusting

1. Preheat the oven to 325 degrees. Line 3 8-inch square baking pans with parchment paper. Butter the paper.
2. Combine the dry and wet ingredients in separate bowls. Combine, whisking until smooth. Divide the batter equally between the baking pans and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
3. Let the cakes cool for 10 minutes in the pan and then remove to a wire rack to finish cooling.
4. Heat the cream over medium low and melt in the chocolate. Apply the frosting to each layer and then dust with unsweetened coco powder, being sure to dust the edges. Stack the layers. Reserve the remaining chocolate sauce and let the cake sit for at least one hour.
5. Slice and serve garnished with remaining sauce and shaved chocolate.
