Fava Bean Puree With Wilted Spinach

This Fava Bean Puree With Wilted Spinach Recipe will add the perfect touch of Southern Charm to your next meal.

Fava Bean Puree With Wilted Spinach


10 cups spinach
2 slices of thick, center cut bacon or pancetta
2 lbs. fava beans, shelled
3 cups chicken stock
Salt and pepper, to taste
Extra virgin olive oil


1. Bring the chicken stock to a rolling boil in a medium saucepan. Add the beans and cook until tender, about 10 minutes. Drain two cups of the stock and place the remaining 1 cup of stock and beans in a blender. Puree until smooth. Season with salt and pepper.
2. Chop bacon or pancetta and heat a skillet to medium. Fry the bacon until crisp and remove to a paper towel to drain. Sautee the spinach in the bacon drippings until wilted.
3. Move the bean puree to a plate and top with the wilted spinach and bacon pieces. Drizzle with olive oil right before serving.
