French Banana Dessert Crepes

By: Sheila Reynolds

Those French sure new what they were doing when they brought Crepes mainstream! This banana crepe recipe is simple and delicious. If you really want to go the extra mile try adding some Nutella or peanut butter to the inside of the crepe.

1 ½ cups flour
¼ cup almond flour
½ tsp. salt
3 eggs
2 cups whole milk
3 tbs. butter, melted
2 tbs. olive oil
Sliced bananas
Chocolate sauce

1. Coat a skillet in butter and heat it over medium heat. Slice the bananas and reserve.
2. Combine the flours and salt, whisking to combine. Add the milk, whisking until smooth, and then incorporate the eggs one at a time.
3. Pour a half-ladle of batter into the skillet and swirl the pan to spread it out. Cook for about one minute, flip and cook until set, about 45 more seconds. Remove and repeat until all of the batter is used up.
4. Layer the sliced bananas and a few mint leaves inside of the crepe, fold it into a triangle and then top with more mint and chocolate sauce before serving.
