Fun Kids Fish Recipe

4 ounces of white fish, baked until flaky
1 ½ cups of potatoes, peeled, diced and roasted until cooked through
1 onion, diced
1 clove garlic, minced
1 egg
1 lemon
1 tbs flour
¼ cup panko bread crumbs
Olive oil
Salt and pepper

1. Drizzle olive oil in a small saucepan and heat to medium. Sautee onions and garlic, seasoning with salt, until translucent. Remove from heat and let cool.
2. Mash the potatoes and flake the fish. Combine the two in a large mixing bowl, and then add 1 tbs of flour and the sautéed vegetables. Beat the egg in a separate bowl and then add it in, stirring everything until combined. Season with salt and pepper, and add the lemon zest. Mix again.
3. Form the mixture using fish-shaped cookie cutters. Dust the shapes with panko breadcrumbs and then refrigerate for 30 minutes.
4. Heat oil in a large pan and sauté the fish shapes for five minutes per side. Serve with tartar sauce and lemon wedges.
