Pumpernickel bread, cut into rounds
1 cup cream cheese
1 carrot
1 bunch chives, minced
1 clove garlic, minced
Salt and pepper, to taste

1. Add the cream cheese to a bowl. Grate in the carrot and mix in the chives and garlic. Season with salt and pepper and chill for two to four hours.
2. Remove the root and stem of the radishes with a paring knife. Going around the outside, slice notches into the radish, without cutting into the center or through the bottom. Place these in ice water for 10 minutes and then use your fingers to pull apart the blossoms.
3. Peel and cut the cucumbers into 3 inch pieces. With a paring knife, cut around the cucumber in a spiral motion, turning it with your finger while it rests on a cutting board.
4. Arrange the bread along a tray. Place the cream cheese in a pastry bag and pipe it onto the bread. Add the cucumber and then the radish. Garnish with parsley before serving.
