Healthy Cabbage Rolls

Cabbage rolls are a great way to have an elegant side or main dish at dinner. They look like you have spent hours in the kitchen creating these little flavor packed packages. You are sure to impress all your dinner guests. Not only are they delicious, but they are healthy as well. So, show off your kitchen skills while making something nutritious for your family and friends.


1 large head of cabbage, about 3 pounds
1 Tablespoon olive oil
1 cup diced onion
2 cloves garlic, minced
2 large mushrooms, finely diced
1 lb. ground sirloin
3/4 cup uncooked long grain rice
1/4 cup chopped parsley
1 cup strained tomatoes or canned tomato puree
1 1/2 teaspoons salt
pepper to taste
3/4 cup liquid (stock, water, etc.)
