Healthy Dining Grilled Chicken with Side Salad

This Grilled Chicken with a side salad is a great tasting and simple dish to help support your weight goals or just keep on the healthy side of dining. Don’t let the simplicity of this meal fool you. If you cook your chicken just right and season accordingly, you will have a delicious meal you will be proud to serve.


4 chicken breasts, trimmed and patted dry
Seasoned pepper, to taste
Salt, to taste

Vine-ripened tomatoes, quartered
Greek olives, deli mix
Yellow tomatoes, quartered
Red onion, sliced
Cucumbers, sliced and quartered
Mixed field greens, 8 cups

½ cup olive oil
¼ cup red wine vinegar
½ tsp. Dijon mustard
2 tbs. fresh rosemary, chopped, plus more for garnish
Salt and pepper, to taste


1. Preheat a grill to medium heat. Season the chicken breast with seasoned pepper and salt on both sides. Grill over medium heat until cooked through, about 20 to 30 minutes, flipping once.
2. In a large bowl, combine the olive oil, red wine vinegar, mustard, and rosemary, whisking to combine. Season with salt and pepper and then toss the field greens.
3. Arrange the greens on a plate, topping with the remaining vegetables and olives. Add the chicken and garnish with rosemary before serving.
