Homemade Chicken Nuggets and Fries

By: Sheila Reynolds

Chicken Nuggets and Fries are a sure fire hit with your children and if you want more control over what your family is eating as opposed to some of the mystery meat chicken nuggets from fast food restaurants, this recipe is the way to go.

4 chicken breasts, cut into pieces
1 cup whole milk
1 lemon, juiced
1 cup flour
2 eggs, whisked
1 cup bread crumbs
Salt and pepper
Seasoned salt

4 russet potatoes, peeled and cut into strips

Peanut oil, for frying

1. Mix the milk and lemon juice in a large dish and let stand for 10 minutes. Add the chicken and toss to coat. Refrigerate for 30 minutes.
2. Place the potato strips in a large bowl and cover with water. Let sit at room temperature for 30 minutes.
3. Heat peanut oil in a deep fryer to 350 degrees.
4. Pat the chicken pieces dry. Gather three dishes: place the flour in one, the eggs in another and the bread crumbs in the last. Season everything with salt and pepper or seasoned salt.
5. Dredge the chicken in the flour, then the egg, and then the bread crumb. Place on a wire rack. Remove the potatoes from the bowl and dry on paper towels.
6. Fry the potatoes in batches for one minute each. Remove to a paper towel. They should be a pale white – not golden brown.
7. Fry the chicken pieces in batches until cooked through and golden brown, about 10 minutes. Remove to paper towels to drain.
8. Fry the potatoes again, in batches, until golden brown. Remove to paper towels to drain, seasoning immediately with salt.
9. Serve the chicken nuggets and French fries with a side salad and a dipping sauce of your choice.
