Homemade Chickpea Soup Recipe

This Homemade Chickpea Soup recipe is not only healthy but absolutely delicious. The chickpeas add protein and fiber making this a surprisingly hearty soup your friends and family will love. You can substitute out the chicken broth for a vegatable broth if you want to make a vegetarian version.

Homemade Chickpea Soup Recipe


1 onion, chopped
3 stalks celery, chopped
3 carrots, chopped
3 cloves garlic, minced
2 cups diced roma tomatoes
4 cups chicken broth
2 cups cooked chickpeas
Salt and pepper to taste
Olive oil
Parsley, for garnish
Salt and pepper


1. Sautee the onion, celery, carrots and garlic in olive oil over medium heat. Add the tomatoes and stock and bring to a boil, then reduce to a simmer.
2. Add the chickpeas and season the soup with salt and pepper. Cook for about 20 minutes.
3. Serve with a drizzle of olive oil and fresh parsley for garnish.
