Irresistable Homemade Raspberry Mint Jam

By: Sheila Reynolds

Making homemade raspberry mint jam is one of my family’s traditions and a great gift idea for the holidays especially if you dress up the jar a little bit for a beautiful presentation. Depending where you live, you might have to plan ahead a bit for when raspberries are in season in your area, but now a days you can find raspberries pretty much year round.

  • 12 oz fresh raspberries, rinsed or frozen
  • 1/4 cup granulated sugar (or more if you have a sweet tooth)
  • 1/2 lemon, juiced
  • 1-2 tablespoons (chopped fresh mint leaves to taste)

  1. Add ingredients to a sauce pan and bring to a boil. Stirring constantly, continue cooking, testing the gel consistency with a spoon. Dip a cold spoon into the fruit and lift it out, turning it as you do. If the liquid drops off, it’s not ready; if it is very thick and the drops run together as they slide off the spoon, it’s done.
  2. Remove from the heat and cool completely. Store in jars for two weeks in the fridge, or can for longevity.
