Homemade Southern Biscuits and Sausage Gravy Recipe

Ingredients

1 batch country biscuits (link)
1 lb. spicy sausage
2 tbs. all-purpose flour
1 tbs butter
1 tsp. dry mustard
2 cups milk
Salt and pepper, to taste

Directions

1. Heat a large skillet over medium heat. Brown the sausage, breaking it into crumbles. Remove with a slotted spoon to a paper towel lined plate to drain, keeping the drippings in the pan.
2. Add butter to the pan to make about 2 tablespoons of fat along with the sausage drippings. Add flour and whisk, cooking until a pale yellow. Add dry mustard and season with salt.
3. Slowly whisk in milk, working until smooth. Let this cook, whisking occasionally, until it begins to bubble, and then add the sausage back in. Season with salt and a lot of cracked black pepper.
4. Reduce heat and simmer for two to three minutes, or until thick. Serve over biscuits.
