Honey Chipotle Glazed Baby Carrots

This honey chipotle glazed carrot side dish recipe is simple to prepare and packed with flavor. Using baby carrots makes it even easier to prepare since no peeling or cutting is required.

Honey Chipotle Glazed Baby Carrots Recipe


1 ½ to 2 pounds baby carrots
4 tablespoons honey (orange blossom honey if available)
4 tablespoons butter
3 tablespoons brown sugar (pack down)
½ lemon (juice of the lemon)
1 teaspoon salt
½ tsp ground chipotle pepper, or to taste


Rinse carrots and put in medium saucepan. Cover carrots with water, add salt and bring to a boil. Reduce heath to low-medium, cover and continue cooking for approximately 15 minutes or until tender. Drain water and set aside.

In a sauté pan, melt butter over low-medium heat and add honey, brown sugar and chipotle pepper. Stir until sugar is fully dissolved and add freshly squeezed lemon juice. Add carrots and continuously stir until carrots are fully coated and continue to stir until carrot are reheated and have a beautiful glaze. Serve immediately and receive smiles.
