How to Make Perfect Mashed Potatoes

3 pounds russet potatoes, peeled and diced
1 ½ to 2 cups whole milk
3 tablespoons unsalted butter
1 tbs salt, plus more to taste
Parsley, for garnish

1. Add the diced potatoes to a large stockpot and cover with water. Add one tablespoon of salt. Bring to a boil and cook until the potatoes are very soft.
2. Drain the potatoes and return to the hot pan. Leave uncovered to release steam.
3. Melt the butter and heat the whole milk separately. Add the butter and the potatoes to a large mixing bowl. Mash with a potato masher until no longer chunky. Season with salt and pepper
4. Slowly add milk while using a handheld mixer to whip the potatoes. Work slowly and add enough milk to create the desired consistency.
5. Place the potatoes in a serving bowl. Top with parsley.
