How to Make the Perfect Deviled Eggs


8 eggs
1/3 cup regular mayonnaise (not dressing)
1 tbs smooth Dijon mustard
2 tbs grated onion
1 tbs lemon juice
1 clove garlic, grated
Salt and pepper, to taste
Paprika, to garnish


1. Hard boil 8 eggs. Place in a stockpot, cover with water and bring to a rolling boil. Top with the lid, remove from the heat let them sit, undisturbed, for 18 minutes. Drain and place the eggs in a bowl of ice water to cool. 
2. Peel and rinse the eggs, and then pat them dry. Cut them in half. Remove the yolks to a small mixing bowl and place the whites on a serving platter. Add the mayonnaise, mustard, grated onion, lemon juice, grated garlic, and salt and pepper to taste. Mash and whip until creamy and smooth using a fork.
3. Spoon the mixture into a piping bag outfitted with a scalloped tip. Squeeze the yolk mixture into the egg whites.
4. Garnish with paprika.

Note: Replace the lemon juice with pickle juice for a unique twist, or add hot sauce for a spicy kick.
