How to Make the Perfect Omelet


6 eggs
4 tbs whole milk
Salt and pepper, to taste
1 tbs unsalted butter
Red pepper, diced
Crimini mushrooms, diced
Rosemary, minced
Sharp cheddar, grated


1. Whisk the eggs, milk and seasonings together in a large bowl until fluffy. Heat a pan to medium high and sauté the red pepper and mushrooms, seasoning with salt and pepper. Remove to a paper towel to drain.
2. Preheat a pan to medium low and melt 1/3 of the butter in the bottom. Pour 1/3 of the eggs into the pan.
3. Push the edges of the eggs into the center, rolling the pan to expose the uncooked egg to the heat. When the eggs are mostly set, add the filling and season with rosemary. Sprinkle a small bit of cheese inside.
4. Fold the omelet in on itself, let cook for one more minute, and then serve.
