Italian Beef Round Roulade Recipe

These amazing Italian Beef Round Roulade Recipe is a classic Italian dish that goes especially well with a glass of red wine. This recipe makes enough for a family meal all will love.

Beef Round Roulade Recipe


2 lbs. thin cut top round
2 tbs Dijon mustard
8 slices thick cut bacon
1 onion, diced onion
1 tbs oil
½ cup carrot, sliced
¼ cup celery, sliced
½ c. dry red wine (Cabernet Sauvignon, Merlot, or Pinot Noir)
Salt and pepper, to taste


1. Soak toothpicks in water.
2. Fry bacon until crisp in a Dutch oven. Drain and crumble. Keep the drippings in the pan.
3. Flatten beef on a large work surface and cut into individual portions. Spread each piece evenly with mustard and sprinkle with bacon and diced onion. Fold the beef into little purses and secure with soaked toothpicks.
4. Add oil to the Dutch oven if there are not enough bacon drippings. Heat to medium. Brown the roulade all the way around and then remove from the pan.
5. Sautee any remaining onion along with the carrot and celery in the drippings. Add the wine and season with salt and pepper. Place the beef roulade back inside and add enough water so that the liquid comes up halfway along the edge of the beef.
6. Bring the stock to a slow simmer. Cover and cook for two hours.
