Mediterranean Chicken Stew

One of the healthiest ways of eating is based on the Mediterranean diet. The nutritional habits of many Mediterranean cultures - of Greece, southern Italy, and parts of Spain - include whole grains, fruits, vegetables, nuts and seeds. ThisĀ Mediterranean chicken stew is a very healthy and very filling dish. I really like this dish because I can make a huge pot of it that lasts for days!

Ingredients

2 tsps. of canola oil
4 5 ounce skinless and boneless chicken thighs with fat trimmed off
3 garlic cloves, chopped
2 carrots, chopped
1 celery stock, chopped
1 onion, finely chopped
3/4 cup of chicken broth
1/2 cup of dry white wine
1/4 tsp. of salt
1 can of petite diced tomatoes, 14.5 ounces
1 can of cannellini beans, 15.5 ounces
1/4 fresh basil, chopped
1 tbsp. of lemon zest, grated
