Mediterranean Diet Meat Loaf

Here is a great Meat Loaf Recipe that uses ingredients common in the Mediterranean Diet. I am one of those people who wanted meat loaf on the dinner menu every week. When I discovered I could make a Mediterranean meat loaf recipe that also incorporated the heart healthy principles of the Mediteranean Diet I was really excited. The biggest concern people have is that it isn't going to taste like meat loaf at all. Personally, I like the taste so much I think I might continue to make my meatloaf this way.


1 1/2 pounds of ground chicken (or turkey)
2 tbsp. of fresh basil, chopped
1/4 cup of fresh parsley, chopped
1 cup of carrots, chopped
1 cup of fresh peas
1 cup of onions, chopped
1/3 cup of plain bread crumbs
1/2 cup of parmesan cheese
2 tbsp. of sundried tomatoes, chopped
1 egg
1/2 tsp. of paprika
1/2 tsp. of cumin
1 tsp. of garlic powder
1 1/2 tsp. of salt
1 1/2 tsp. of ground coriander
ketchup to taste
