Mediterranean Grilled Prawn Salad with Lemon and Parsley

This Grilled Prawn Salad with Lemon and Parsley Recipe is a super flavorful and healthy shrimp dish that is easy to prepare and your family will love it. With the addition of heart healthy olive oil and parsley, this dish is a great entre if you are following the Mediterranean Diet style of eating.

Mediterranean Grilled Prawn Salad with Lemon and Parsley

Ingredients

2 lbs. shrimp, peeled and deveined, tails on
2 lemons, juiced, plus more for garnish
4 tbs. extra virgin olive oil
Handful of parsley, roughly chopped, plus more for garnish
Salt and pepper, to taste

Directions

1. Combine the lemon juice, olive oil, parsley, salt and pepper in a plastic bowl. Add the shrimp and toss to coat. Refrigerate for 15 minutes.
2. Preheat a grill to medium (about 350). Remove the shrimp from the marinade and discard. Place them in a grilling basket and cook, turning occasionally, until pink, opaque and cooked through.
3. Remove to a platter to serve, garnishing with lemon wedges and fresh parsley.
