Mediterranean Lentil Salad Recipe

The Mediterranean diet is a lifestyle that focuses on eating whole grains, fruits, vegetables, nuts, and seeds. Arguably one of my favorite parts of the Mediterranean lentil salad is the fact that it has everything you want and need packed into one bowl! If you are looking for a healthy, filling, and delicious dish – it just doesn't get much better than a Mediterranean lentil salad.


1 cup of dry brown lentils 
1 cup of carrots, diced
1 cup of red onions, diced
2 cloves of garlic, minced
1 bay leaf
1/2 tsp. of dried thyme
2 tbsps. of lemon juice
1/2 cup of celery, diced
1/4 cup of parsley, chopped
1 tsp. of salt
1/4 tsp. of ground black pepper
1/4 cup of olive oil
