Mediterranean Pasta Salad Recipe

I try to avoid pasta salad because it is not exactly the healthiest dish in the world. However, when I embraced the Mediterranean diet or lifestyle, I was introduced to a whole new world of healthy and delicious dishes; the Mediterranean pasta salad recipe being one of my favorite choices. This pasta salad quickly became the dish that I made to take to every party. I never had to worry about anyone else bring it and everyone always loved it!

Ingredients

1 pound of tricolor pasta
1/4 cup of balsamic vinegar
3 tsps. of Dijon mustard
freshly ground pepper to taste
2/3 cup of extra virgin olive oil
1/3 cup of sun dried tomatoes, diced
1/4 cup of onions, diced
1/3 cup of fresh basil
2 pickled pepperoncini peppers, diced
3 tbsps. of black olive halves
2 tsps. of fresh oregano, chopped
1 1/2 ounces of feta cheese
1 1/2 tbsps. of Romano cheese, grated
