Pasta with Fresh Tuna, Tomato and Mint

This beautiful pasta dish incorporates fresh tuna, San Marzano tomatoes and mint as the main stars while creating a wonderful wine based sauce when the flavors mingle together. This is one of my favorite ways to eat tuna and is a great healthy twist when you are craving pasta.


5 tbs. olive oil
5 cloves garlic, minced
12 ounces fresh tuna, patted dry
1 28-ounce can San Marzano tomatoes
3 tbs. fresh mint, chopped
½ cup Chianti
1 lb. linguini
Salt and pepper, to taste


1. Heat the olive oil in a deep skillet and sauté the garlic until fragrant, about two minutes. Add the wine, cook for five minutes, and then add the tomatoes. Break up the tomatoes with the back of a spoon. Add the tuna, reduce the heat to a simmer and cover. Cook until the tuna is opaque, about 12 minutes.
2. Break the fish up into chunks. Season the sauce with salt and pepper.
3. Bring a large pot of water to a rolling boil, season the water with salt, and cook the pasta according to package directions.
4. Drain the pasta, toss with olive oil, and then top with the tuna and sauce. Garnish with mint and serve.
