Quinoa Stuffed Peppers

This Quinoa Stuffed Peppers Recipe is not only healthy but easy to cook and makes a great impression on your dinner guests.

Quinoa Stuffed Peppers Recipe


1 cup quinoa, rinsed thoroughly
1 tbs olive oil, plus more for drizzling
2 cups chicken broth
½ cup grated parmesan cheese
1 egg, beaten
2 peppers, tops and cores removed
Salt and pepper, to taste
Fresh herbs, your choice


1. Heat one tablespoon of olive oil in a sauce pan. Add the quinoa and toast until nutty and brown, about three minutes.
2. Add two cups of chicken broth to the pot. Season with salt.
3. Bring to a boil, cover, and then reduce the heat to simmer. Cook for 15 minutes. Remove from the heat, take off the lid, and let the quinoa sit for five minutes.
4. Fluff the quinoa and add to a large bowl. Add in parmesan cheese, stirring to mix. Fold in beaten egg. Fill the peppers with the mixture
5. Add one inch of water to large stockpot. Bring to a simmer and place peppers inside. Cover and cook, about 20 minutes, until just soft.
6. Preheat oven to 400. Add peppers to roasting pan, drizzle with olive oil, and bake about 20 minutes until the skin wrinkles.
7. Garnish with fresh herbs before serving.
