Quinoa Stuffed Tomato Recipe

Here is great Quinoa Stuffed Tomato recipe that is not only healthy, but is just as creative as it is delicious.

Quinoa Stuffed Tomato Recipe

Ingredients

4 large tomatoes
1 cup quinoa, rinsed, cooked and cooled
1 can black beans, drained and rinsed
½ cup peas, cooked and cooled
½ cup corn kernels, cooked and cooled
1 small cucumber, chopped
Orange bell pepper, chopped
3 tbs olive oil
3 tbs rice wine vinegar
½ tsp. chili powder
1 clove garlic, grated
Salt and pepper, to taste
Salad greens

Directions

1. Mix the quinoa, black beans and vegetables in a large bowl. Add the olive oil, rice wine vinegar, chili powder, garlic, salt and pepper to a mason jar. Shake until combined and then use to dress the quinoa.
2. Cut the top off of, and core, the tomatoes with a sharp paring knife. Fill each one generously with equal portions of the mixture.
3. Serve with salad greens.
