Shrimp Stuffed Tomato Recipe

This creative Shrimp Stuffed tomato recipe is a great appetizer and also makes a great dish for weddings if you want to add something creative your guests will be talking about. This is a great way to add some creativity to your next dinner party.


1 lb. small shrimp, boiled and chilled
1 cup white rice, cooked and chilled
4 vine ripened tomatoes
1 cup yellow bell pepper, diced
1 cup red bell pepper, diced
½ cup olive oil
¼ cup fresh lemon juice
¼ cup chopped fresh parsley
Salt and pepper, to taste
4 green onions, sliced
2 lemons cut into small triangles
Chives, for garnish


1. Slice the tops off of each tomato. With a small melon baller, remove the inside of the tomatoes, leaving a hollow center.
2. In a bowl, whisk together the lemon juice and olive oil, seasoning with salt and pepper. Add the rice, bell peppers, parsley, and green onions, tossing to coat.
3. Fill the tomatoes with the rice mixture and top with a few shrimp. Top with chives and garnish with a slice of lemon. Serve cold.
