Skillet Fried Fish

Here is a southern classic Skillet Fried Fish recipe you will absolutely love. Yes this might qualify as a guilty pleasure, but well worth it!

Skillet Fried Fish Recipe


4 thick fish fillets, cod or haddock
ΒΌ cup flour
2 eggs, beaten
1 cup instant potatoes
1 cup parmesan cheese, grated
1 cup dry breadcrumbs, Italian style

Salt, to taste
Oil, for frying


1. Pat fish dry and dust with flour. Shake off the excess. Combine the instant potatoes, cheese and breadcrumbs in a shallow dish. Dip the fish in the egg and then in the breading. Set the fish on a wire rack. Refrigerate for 20 minutes
2. Heat a few inches of oil in a deep skillet over medium heat. When a wooden spoon inserted in the oil instantly creates bubbles around it, the oil is ready.
3. Fry the fish, about 5 minutes per side, until golden brown and cooked through. Drain on paper towels, seasoning with salt immediately after removing from the pan.
4. Garnish with lemon and fresh herbs, and serve alongside French fries and salad.
