Spanish Tapas Blood Sausage and Gazpacho Sauce

This Spanish Tapas Blood Sausage and Gazpacho Sauce is a traditional Spanish Recipe that will add some Spanish flair to your next dinner gathering. Don't let the blood sausage scare you off. Below is the recipe for preparing this dish, and just purchase the blood sausage separate.

Spanish Tapas Blood Sausage and Gazpacho Sauce

Ingredients

8 ripe tomatoes, chopped
1 cucumber, peeled and chopped
2 roasted red peppers, chopped
½ red onion, chopped
1 clove garlic, minced
¼ cup olive oil
¼ cup red wine vinegar
Hot sauce, to taste
Worchester sauce, dash
1 tbs. fresh parsley
2 tbs. fresh chives

Spanish blood sausage, cut into thick sections
Olive oil, for frying

½ cup olive oil
¼ cup cilantro
Salt and pepper, to taste

Directions

1. Blend the gazpacho ingredients smooth and refrigerate overnight.
2. Heat a skillet to medium and coat with oil. Fry the blood sausage in the oil until browned and cooked through.
3. Blend olive oil and cilantro. Plate the blood sausage and gazpacho, drizzle with herb oil and serve.
