Spicy Fried Squid Recipe

2 lbs. squid, cut up
2 tbs reduced sodium soy sauce
1 tbs fish sauce
1 tbs sesame oil
2 tbs chili paste
1 tbs sugar
1 tsp. minced ginger
1 tbs chili powder
2 fennel bulbs, fronds removed and sliced
4 green onions, sliced
2 fresh red chilies, sliced in half
4 tbs light color oil for frying

1. Whisk the soy sauce, fish sauce, sesame oil, chili paste, sugar, ginger, and chili powder together.
2. Heat a wok over medium high heat. Add oil to the pan and add the halved red chilies. Sautee the chilies for about a minute and then remove to a plate.
3. Add fennel and squid to the pan and fry, stirring often, until the squid begins to curl and the fennel becomes translucent, about four minutes. Add the sauce and bring to a slow bubble. Reduce heat, add the green onions and simmer for one to two minutes.
4. Remove to a serving platter and garnish with chili peppers.
