Stuffed Cherry Tomatoes with Anchovy and Egg

This stuffed cherry tomato and anchovy appetizer is an explosion of flavors for your foodie friends. This elegant appetizer idea is inspired by Spanish tapas and will take your appreciation of anchovy to the next level. If you don't like anchovies, this might be your chance to change your opinion on these little guys.


Roma tomatoes, halved
6 medium-boiled eggs, peeled and chopped
Green olives
Anchovy fillets
Dill, for garnish


1. With a spoon, remove the insides of the roma tomatoes, and use a paring knife to flatten the bottom so they sit upright.
2. Fill the cavity with hardboiled eggs, seasoned with salt and pepper. Push a spray of dill into a green olive, wrap it with an anchovy, and set this on top of the egg.
