Thanksgiving Cranberry Cookies

By: Sheila Reynolds

Here is a fun cranberry cookie recipe just in time for the holidays. Cranberries are a staple at thanksgiving, so why not test out this recipe as a festive dessert cookie while your guests are enjoying a nice cup of coffee after their feast. These also make a great gift idea if you put a cute pink ribbon on them as you see in my photo below.

  • 2 cups flour
  • ½ tsp. salt
  • ½ tsp. baking powder
  • 1 stick butter, softened
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 tsp. vanilla
  • 1 egg
  • 1 cup dried cranberries

  1. Mix the flour, salt and baking powder in a bowl. Cream the butter and sugars separately and then whisk in the egg and vanilla into this until creamy and smooth. Slowly add in the dry ingredients until fully incorporated. Mix in the cranberries using a folding motion.
  2. Preheat the oven to 375. Drop spoonfuls of dough two-inches apart on a baking sheet covered in parchment paper. Don’t overcrowd the baking pan.
  3. Bake for 7 to 10 minutes, or until the edges just begin to brown. Cool on the counter for two minutes before moving the cookies to a wire rack to finish cooling.
