12 mussels
12 clams, scrubbed
1 lb. king prawns
2 Spanish chorizo, sliced
1 onion, chopped
5 cloves garlic, minced
1 can San Marzano tomatoes
2 cups short-grain rice
3 cups chicken broth
1 cup sweet peas, thawed
Pinch of saffron threads
Salt and pepper, to taste
Lemons, garnish
Olive oil

1. Heat olive oil in a large, shallow skillet. Brown the chorizo and remove to drain. Sautee the onions and garlic for about three minutes, and then add the tomatoes, crushing them with the back of a spoon. Add the rice, stirring to combine.
2. Pour in the chicken broth and simmer for about 12 minutes. Add the chorizo, saffron, peas and the seafood. Let this simmer for 15 to 20 minutes. Discard any mussels or clams that don’t open. Turn the heat on high for the last minute of cooking to crisp the rice on the bottom of the pan.
